Nothing could be simpler than this four-ingredient cookie recipe that takes just a few minutes to prep and not long to bake. As a rather sturdy cookie made of oats, these pack well for travel or in lunch bags!
Parents – pop one or two of these in your kid’s lunchbox. What a healthy dessert! Frankly these would be excellent for breakfast as well paired with a couple eggs. What kid (or adult!) wouldn’t get excited for cookies for breakfast now and again?

- 1 cup quick oats
- ½ cup unsweetened applesauce
- 2-3 Tbsp Splenda
- 1 tsp cinnamon for topping
Preheat oven to 350 degrees. In a large bowl, combine oats, applesauce, and Splenda, and mix together until a thick dough forms (feel free to add cinnamon to the dough if you want). Form dough into cookie shapes and place on a baking sheet, lined with parchment paper. Gently press down on cookies and sprinkle tops with cinnamon. Bake at 350 degrees for 12-15 minutes. Remove and enjoy!
This recipe makes four carb servings. If you divide dough into 8 larger cookies, 2 cookies = 1 carb. If you make 12 two-bite cookies, 3 cookies = 1 carb. On L2, you could have this as one of your carbs at meal #1 on Day 1 or have 2 servings at that meal! Unsweetened applesauce can be used as a carb now and again. ¼ cup = 1 carb. As a small serving, I find it best eaten in recipes rather than on its own to keep portions under control.
