Welcome to Level 2 bootcampers! As you've discovered, this level has some days with no carbs and some days with a lot of carbs! My guess is that the low-carb days are trickier. This week I'm sharing one of my favorite carb-free meals that surprised me with how flavorful it was and how well the ingredients worked together. Tilapia....tomatoes...green chilies...who knew???
Another couple perks to this meal: it's FAST prep! While the dish is broiling, I'll make veggie sides or clean up around the kitchen. There's also little to no clean up. What more could you ask for?
Lauren's Tilapia
Line a cookie sheet with foil and spray with non-stick spray for easy clean up. Place fillets on sheet. Sprinkle with lots of seasonings to your taste and liking. Top with the tomatoes and chilies. Sprinkle Splenda all over the top (this recipe originally called for stewed tomatoes which have sugar, so this is how I get the flavor but still serve it Meltdown friendly!). Broil close to the heat on high for about 30 min if fillets are frozen, less if thawed. Let the tomatoes burn a little! They get all carmelized and sweet. The times I tried to catch the fish sooner to avoid the burn on the tomatoes, there was much less flavor. Serve with salad, sugar snap peas as seen in the photo, or other veggie sides. If you choose to have this at a carb meal, it is certainly tasty over a 1/2 cup serving of cooked brown rice, but as is, this meal is protein/veggie only!
