"Friendly Feasting with Coach Lauren"

Before I get started with this week's blog: NEWS FLASH - Friendly Feasting is moving to Fridays! (If you've been my client you know I love alliteration: Marvelous Mondays, Terrific Tuesdays, Wonderful Wednesdays...) I'll still post on FB when the new recipes are up, but be aware. Lucky you - two blogs this week as we transition!

Here we are, gearing up for L3! I wanted to share a couple ideas for that Wednesday protein shake/fruit combo if you're looking to jazz it up instead of just chugging the shake as you munch on your fave fruit. Give one of these ideas a try:

Fruit Shake

A lot of Meltdowners like to mix fruit into their shakes. Super simple if you have a Magic Bullet or blender. Put 1-2 scoops protein prowder of choices, 8 oz unsweetened almond milk (or use/suppliment with water), 1/4 cup fruit of choice (berries work great!), and a handful or two of ice cubes in the blender and pulse to desired consistency. Feel free to try adding unsweetened cocoa powder or cinnamon or extracts or coffee. Play with this until you find something you love - you'll love Wednesdays!

Blueberry Protein Crepes

  • 1 egg white
  • 1 scoop protein powder, flavor of choice
  • Water, maybe try almond milk but I'd do a mix w water to keep it thin
  • Splenda to taste 
  • Cinnamon, optl
  • Unsweetened cocoa to taste, optl
  • 1/2 cup blueberries, or other fruit 

Mix everything but the fruit together. The egg whites are a bit of extra protein - I've decreased the egg amount and tweaked the recipe to fit the protein shake/fruit snack better. Add water to the batter in place of the extra egg whites to reach a thin consistency so the batter spreads out very thinly in the pan. Pour 1/4 cup of the mixture in to a nonstick pan sprayed with nonstick spray, cook for a couple minutes. This is a crepe, not a pancake so the thinner the better! Flip and cook briefly to brown other side. Fill or top crepe with fruit.
