"Friendly Feasting" with Coach Lauren

CALLING ALL SWEET TOOTHS! Just because we're on a nutrition plan doesn't mean we can't have dessert! Today I have a few meltdown-friendly cookie recipes.

One thing to keep in mind is that like any dessert, meltdown-friendly desserts should be consumed in moderation. While Splenda, Stevia, and Truvia are approved, all sweeteners should be used minimally. Use of such products can trigger your body's desire for more sweets and may lead to unhealthy cravings and unapproved cheats.

NGPT Fake No Bakes

  • 1/2 cup quick oats
  • 1 T natural peanut butter
  • unsweetened cocoa to taste
  • Splenda to taste

Mix oats with a little water and other ingredients. make into 4 cookies. Let set and refrigerate. This counts as a carb and fat, so it  may only be enjoyed while on Level 1.

Natural Peanut Butter Cookies

  • 1/2 cup natural peanut  butter (creamy and crunchy both work)
  • 1/2 cup Splenda
  • 1 egg
  • 1/2 tsp baking soda

Preheat oven to 350 degrees. Mix all ingredients in a small bowl. Form into 8 small cookies. I prefer making balls so the cookies are thicker and less done, but can flatten and hatchmark like typical pb cookies if you like. Bake 8-12 min depending on your oven and how done you like your cookies. A quarter of this recipe is a fat (2T pb), so 2 cookies would be a serving. My favorite time to eat these is with the L3 shake/pb snack! Do note: if you're on L4, often your fat serving is 1 T pb. In that case, eat only 1 cookie!

10-Calorie Chocolate Miracle Noodle Cookies

Yep, you read that recipe name correctly! Super low cal, chocolate, and cookie all in one! Who thought to mess around with miracle noodles to make chocolate cookies? I don't know (Trish and I both found this one online) but thanks!

  • 1 bag miracle noodles - freebie food!
  • 2 egg whites
  • 3 T unsweetened cocoa - freebie food, in moderation!
  • 1/2 tsp baking powder - freebie food!
  • 2 T Splenda - freebie food, in moderation!
  • 1 dash sea salt, optional

Preheat oven to 375 degrees. Open, rinse, and well dry noodles. Cook over high heat in a pan, stirring often, until they lose some translucency and parts seems shriveled. Cool a couple of minutes then pulse in a food process until it becomes a gel. Add other ingredients and process until blended. Put into the fridge awhile if it looks runny. Spray a foil-lined pan with Pam and form small cookies (if memory serves I made about 7-8 cookis). Bake about 10 minutes. Eating the whole batch of cookies would be a half protein serving on L1-3 and a whole protein serving on L4. If you have 1-2 small cookies, the protein portion is negligible. Consider playing with this recipe a bit to try different flavors - let me know if you create anything amazing! :)
