Welcome to Level 2 bootcampers! As you've discovered, this level has some days with no carbs and some days with a lot of carbs! My guess is that the low-carb days are trickier. This week I'm sharing one of my favorite carb-free meals that surprised me with how flavorful it was and how well the ingredients worked together. Tilapia....tomatoes...green chilies...who knew??? So you say you don't like fish? Well trust me, you'll LOVE this. Wait...and you? You love fish? Well then get excited! This L1 fish dish is super tasty and all dolled up to not taste too fishy for those who traditionally dislike fish. The addition of crabmeat makes it a little pricier so this is a meal I only have periodically as a special treat :) And do you see that photo?! This is definitely a classy dish to serve if you're having "guests to impress" over for dinner! Read more »
