Looking for a meal to make for the whole family or a dinner party? Try this Spanish paella recipe with a mix of meats over brown rice for a hearty dish everyone will dive into!

- 2 Tbsp olive oil
- 1 Tbsp paprika
- 2 tsp oregano
- Salt/pepper to taste
- 2 lbs chicken in chunks
- 2 Tbsp oil, divided
- 3 minced garlic cloves
- 1 tsp red pepper flakes
- 2 cups cooked brown rice
- 1 bay leaf
- ½ bunch chopped parsley
- 4 cups low-sodium chicken broth
- 2 zested lemons
- 2 Tbsp oil
- 1 chopped onion
- 1 chopped red pepper
- ½ lb turkey chorizo, uncased and crumbled
- 1 lb shrimp
In med bowl, mix 2 Tbsp oil, paprika, oregano, salt, pepper. Stir in chicken to coat. Cover, refrigerate. Heat 2 Tbsp oil in skillet over med heat. Stir in garlic, pepper flakes, and rice. Cook to coat rice with oil (3 min). Stir in bay, parsley, broth, and lemon zest. Bring to boil, cover, reduce heat to med-low. Simmer 20 min. Meanwhile heat 2 Tbsp of oil in 2nd skillet over med heat. Stir in marinated chicken and onion, cook 5 min. Stir in bell pepper and sausage, cook 5 min. Stir in shrimp and cook. Spread rice mixture onto serving tray. Top with meat/seafood mix. Serves 8.
Makes 8 protein/carb servings. I used turkey smoked sausage – look for an all-natural sausage and use in moderation. Can halve this recipe and make four servings for yourself to eat through the week. Or make the whole batch and freeze individual servings for quick lunch or weeknight meals you can microwave.
