Do you like breakfast food for breakfast? Dinner? Dessert? I stumbled upon this recipe for a savory “skinny” omelet – perfect for breakfast or dinner. It’s not “skinny” due to healthy ingredients necessarily but rather its own shape. While reflecting, I thought, why not try it sweet too – almost like an egg-based crepe? So below you’ll see the original savory recipe as well as my thoughts for a sweet “skinny” omelet. A little twist on a classic favorite!

- 2 large eggs
- Tiny pinch of fine grain salt
- Seasonings: garlic, cayenne, sage, parsley, etc.
- Savory spread of choice – thin pesto (adds fat), mustard, mustard/veganaise mix (adds fat), etc.
- Dab of Parma! if you want or omit
- Mixed greens, or finely diced (sautéed if you want) veggies
Use fork to beat eggs with salt until uniform in color. In largest nonstick skillet over med heat, pour mixture and give it a swirl to spread thinly in pan. Sprinkle eggs with chives and seasonings. Cooks fast ~ 15 sec-1 min. Run spatula underneath and slice it out of pan onto plate, counter, cutting board. Gently spread pesto, mustard/veg, etc. (thin with water as necessary). Sprinkle with Parma!/cheese, veggies, etc. Roll omelette away from you. Cut in half on deep diagonal or fold as crepe. 1 protein serving or make 2 one-crepe servings and add ½ protein in toppings to each.

- Splenda to taste (instead of the salt from the previous recipe)
- Sugar-free syrup or fruit spread (if using sugar-free fruit spread, use for carb meal and only use a small bit – 1 Tbsp thinned out should be more than plenty)
- Fill or top with fruit, unsweetened cocoa powder, Splenda, cinnamon
